Are there any details on customization out yet? Looks like it would be handled on a separate section from the pause menu. Perhaps at a save point, or outside the game?

As far as i know, we will have customization by the common equipments. Head gear and weapons shows up on Miriam's graphic, as we seen in Demo. So, when you equip a ribbon or hat, it will show on her head, instead of her default head ornament (the little horns). Boots to use as weapons also take the place of her default boots and the game will have different scarves that wiil also change on her graphic. Now, other things, such has hair color, skin color and such, as shown on the picture above, probably will happen in a separate menu / option. It is hard to tell. When they talked about customization, they weren't clear enough. I don't know if the customization will be equipment-based (where changing equipment changes stats and visuals, like in the Demo) or if we will have something more than that.

We might get something like a certain cape in another "of the night" game, that we're able to recolour as we see fit. That would be a nice touch.

neff : No details have been revealed but we know from the demo, as others have said, that items like shoes, ribbons and scarves appear on your body as you change equipment. Not all equipment changes your aesthetics (not programmed yet or not to be done because it might be too much work I dunno) but its clear some do. For the more elaborate accessories, I don't know if they will all be done via equipment or in some other way so they don't have to be tied to your stats or if you want to get crazy with your hair/accessories. Maybe a room in the castle where you can change (since the castle is supposed to be for you) or some sort of salon? For changing other parameters of Miriam (ears, skin tone, etc.) I figure it would be done via shards you apply to your body/skin. At that point it seems like it would be best described as shape-shifting, which could involve magic, rather than just clothing changes. If you have any further questions you probably want to ask Mana but I imagine its too soon for her to answer these questions

Well, by customization, I'm referring more to cosmetic costumes. ...Unless said costumes provide stat-boosts, like you imply.
