All of this stuff is considered non-canon/part of the Legends continuity, but that doesn't stop them from being entertaining (and profitable for Lucasfilm) in their own right! First there's the NPR adaptations of episodes 4-6 with new characters and scenes, most of which help adapt the material for radio format and expand on details mentioned in the movies (A New Hope lasts 6 hours!). If you listen to the podcast Full of Sith, then you've probably heard the hosts gush about how good they are at some point. Then there's the other stuff. They're not as good as the radio dramas based on the movies, but there's a series based on the Dark Forces games featuring Kyle Katarn.

While I don't imagine myself having patience to listen all of those (I had to listen Castlevania Radio Drama, but it hasn't this long and was only one) I still find it fascinating and would be a worth buy to fans. Good find Goobsausage .

Dark Empire 2 and Crimson Empire just got added to the Humble Bundle today. Nice to have both of those, but I still think the NPR dramas of the original movies are the best the bundle has to offer.
