Just finished my first playthrough, beginning to end. Haven't spot a lot of time collecting or replaying.
Here's a quick list of bugs I wrote down while playing:
-During the Galleon Minerva boss fight, the boss moved to the side right as I was landing and whip-cancelling. This caused Miriam to freeze in the falling pose and stay still.
It was resolved when the boss hit me a moment later.
-In quite a few sections, the voice audio does not immediately play when starting dialogue. Usually the first line or 2 of dialogue ends up cut, as the voice just sort of picks up at that point a few seconds later.
-Animations from meeting Dominique to entering the town right afterwards are buggy. I froze in the doorway after initially meeting Dominique, only to appear at the bottom.
Sound effects from entering the hostile area afterwards were buggy for a few seconds too.
-May not be a bug, Stone Mask is an accessory and not a helmet? It unequiped my helmet when putting it on.
This did not occur with Elf Ears, leading me to assume it was unintended.
-My handwriting is terrible. What the hell did this say? Guess it wasn't important.
-The tree to the right of Miriam in this screenshot isn't animated properly.

The shadow behind it moves, however the actual tree graphic is static.
-Some text is too long for the chat window.

Happened in 2 spots from what I've noticed, other spot was after you get off the boat with Johannes.
-At this point, in my notes, I apparently wrote down "Head Flail too good"
After playing for a little while, I decided it wasn't.
Then after playing for a little while more, I definitely decided it was.
Head Flail just too good.
Or maybe it's not. Maybe the bug is that my brain just can't quite decide.
-The perspective of the bat enemies here is sort of awkward.

-There's no music in the village area.
-When turning in a quest, the NPC basically says "Here's your reward."
By the time the chat window disappeared, the item receive notification had disappeared.
No idea what I had gotten, until reopening the quest window.
-Can't accept multiple quests. Once accepting a quest and finishing dialogue, the chat is just dropped.
Seeing as we can accept multiple quests, and that's the obvious thing we'd all do in this situation, it became fairly annoying.
Especially with how slow the conversation start/stop sequence feels.

Ultimately, I enjoyed the demo.
I share a few of the concerns about the graphical quality of the 2.5d perspective here, it looks like the models/animations were well done, but the lighting and atmosphere is fairly lacking.
I'm hoping later areas are more visually pleasing, but something about them currently doesn't really feel great.
I'll likely play the demo a bit more, I haven't really made any real bug-hunting effort nor done any collecting or heavy exploring.
I will say though, opening the map and scrolling as far to the sides as I can really gives the impression of a HUGE castle.
