I have 3 monitors, but the game will only fullscreen on the leftmost monitor despite it being neither my main monitor nor the first monitor. Can move to other monitors in windowed mode, but when attempting to change it back to fullscreen it moves back to the original monitor.

Same for me. I have two monitors and it's stuck on the left one even though my primary is the right one. I even tried changing display settings to get it on the right on, but no amount of switching changed anything.
