I have the game, but not the system. I plan on getting a ps1 or ps2 on ebay just to play it in a more nostalgic way than the Xbox version. I know that ps2 is back compat with ps1 games, so I'm leaning towards getting a ps2, but I've also heard that ps2 does a crappy job playing some ps1 games and some games won't work at all.
Have any of you played Symphony on both ps1 and ps2? Which one runs the game better?

Console of choice is up to you. And the version of said console. PSX if you want full on nostalgia. PS2 if you want a little more control of disk speed.
Both require additional memory cards.
Specific PS3's could be potential. It's got the game as a PS1 classic, no alterations like 360. If it's an older model or special model then it's backwards compatible with PS1 disks so you are set.
It's really up to you. Hell, if you had a PSP you could access an updated version via Dracula X Chronicles.

I've actually never played it on a PS1, since I never had one. I played it quite a lot on my PS2 though, and everything felt right to me. I certainly didn't notice any issues if there were any.

I have the original PS1 black disc for SotN. I play it on PS1, PS2, and PS3. They all seem to run the game exactly the same. I also have a digital version of SotN on the PS3 (downloaded from the PSN). It, too, runs exactly the same as the others. The advantage of the PS3 is that it will make a virtual memory card on the PS3 hard drive to store your saves. (Yay! No memory cards to keep up with!)
I have Dracula X Chronicles on PSP. The version of SotN there is suboptimal in my opinion. I don't like the voice acting updates and some of the changes to other sound effects in the game. If you ask me, stick to the original.

There really isn't a difference, you can even use a PS1 controller on PS2 if you want.

Never tried on PS2. Regret I sold my PlayStation 1 sotn as a kid. Biggest regret in my life when it comes to gaming.
I did manage to get ahold on that version for PSP. One of few games I play and own on that system. Played it too many times to count. If I ever got an Xbox, sotn would be one game in the collection.
This is also why I made sure to get Bloodstained on different platforms. Because the future might give me a chance to own a console. Other than PS vita.
I really wished sotn were on PS Vita and ps4 too. Maybe they are!?

Why not play the original? It is already a port, by the way, of the PS1 version, which came 1 year later and with lots of extra content!

To experience the changes and additions the group responsible for porting it made.
Extra areas, addition of martial fighter Maria, cloaked Richter (aesthetic only), additional enemies. It was ported to Saturn but because Saturn handled transparency differently than PSX, it took extra time to port so they had a few extras made.
