So Zengetsu gets a megaman ish scene in nightmare mode, but Alfred is somehow still alive during Ritual of the Night assuming it's happening in some distant future of curse of the moon, since it's mentioned he is a father figure to a young Alchemist who will appear in COTM.
What the heck is happening exactly? Are Alchemist immortal as well?

Circle of the Moon is a spin off to the main game. It contains the same characters, but has an entirely separate story. They changed to this idea from the prequel idea probably to save the prequel story for another Bloodstained main game is Ritual is successful enough.

This question gets asked a lot.
1) Curse of the Moon's story has little to do with Ritual of the Night.
2) Think of the two games as existing in parallel dimensions within the same universe. There are some points they have in common but don't expect too much.
3) Curse of the Moon is a promotional tool to hype up Ritual of the Night. It introduces characters and concepts but its story should not be taken as a prologue.
